The Le Marseille Fruits Fizz drink is made from gin, St-Germain elderflower liqueur, lemon juice, simple syrup, orange bitters, egg white, fresh fruit and club soda, and served in a highball glass.

Instructions:
- Muddle the pineapple (or other fresh fruit) in the bottom of a cocktail shaker.
- Add the remaining ingredients, without ice, and shake vigorously.
- Once the egg is emulsified, add ice and shake again.
- Strain into a highball glass and garnish with an orange slice.
